you can use that kind of jack knife for whittling, but it is not recommended for chip carving, as the angle of the blade is angled upward. these are the knives i use for whittling (right) and chip carving (left)

Scares the "you know what" out of me. I always seem to cut myself when I use a knife, so if I ever have to (for very small un-clampable carvings), I wrap every finger with that stretchy medical tape - ahead of time! I think I'll step back from this conversation now 🙂
