You are correct. However when I first started carving I hollow ground every tool because they came unsharp, and all I had was a basic bench grinder. Once the gouge was placed on a stone, and the flat was established (thereby minimizing the hollow shape to some extent), it didn't seem to be an issue. As long as the gouge hits the surface of the stone at each side of the hollow ground and enough metal is removed to re-create the majority of a flat, if there is a small hollow left, that never seemed to be a problem. As you mentioned, there is a very real possibility of hollow grinding creating a too fragile edge. The ideal would be to grind a flat bevel surface, so no potential of these issues, but if all you have is a bench grinder, it can work.
Hi Mary, I watched the Video on sharping gouges and this was very helpful. When you glued the leather to the wood forms for stropping the inside of the Gouge, did you glue down the rough side or the smooth side of the leather to the wood?
Larry usually the smoth side has been treated and is water resistant ,the rough side allows more compond to grab hold and gives a more consistant overall polish , if you use the smooth side "tooth " it up with a bit of sandpaper first

I glued the smooth side down to the wood. However, I have seen leather strops being used on both sides, so I'm not really sure it makes a lot of difference.
